How to Grow Beets
Beets are an excellent crop to plant in late summer or early fall for a fresh, sweet harvest in spring or early summer.
They prefer cooler temperatures, and planting in the fall allows the roots to develop slowly through the cooler months, enhancing their natural sweetness and tenderness. Beets thrive in loose, well-drained soil enriched with compost, which encourages smooth, healthy roots.
Plant beet seeds about half an inch deep and a few inches apart to allow room for full-sized roots. Keep the soil consistently moist until seeds germinate, and thin seedlings as they grow to avoid overcrowding. Because beets are cold-hardy, they can often withstand light frosts and even snow, especially when protected by a layer of mulch. Fall-planted beets can be harvested as baby greens early on or left to mature fully for root harvest in spring, making them a versatile and rewarding addition to any garden.
