Brussels sprouts are a slow-growing, cool-season vegetable.

They thrive in cooler temperatures, which help improve their flavor, making them sweeter after exposure to frost. When planting in fall, start with healthy seedlings spaced 18 to 24 inches apart in well-drained, fertile soil with plenty of organic matter. Mulching around the base helps conserve moisture and controls weeds.

As the plants mature, the tiny cabbage-like sprouts form along the stalk from the bottom up. To encourage the plant to focus energy on sprout growth, some gardeners remove the top growing tip about three weeks before harvest. Brussels sprouts can stand frost and cold temperatures, often improving in quality as the weather cools. Harvest the firm, dense sprouts by snapping them off the stalk, beginning from the bottom. With patient care, fall-planted Brussels sprouts reward gardeners with nutritious, flavorful bites well into the colder months.
