How to Grow Carrots
Carrots are a versatile and rewarding crop to plant in late summer or early fall for a fresh harvest the following spring or early summer.
They thrive in loose, well-drained soil that allows their roots to grow straight and long. Plant carrot seeds about a quarter to half an inch deep in soil that stays consistently moist until germination, which can take up to three weeks. Thin seedlings early to give each carrot enough space to mature into a full-sized root. Mulching the row helps conserve moisture and keeps the soil cool as the plants establish.
Carrots benefit from cooler temperatures, and as fall transitions into winter, their growth slows but continues underground. When spring arrives and soils warm, carrots regain momentum, developing sweet and tender roots that can be harvested over a long period. Carrots are among the longest-lasting root vegetables when stored properly, making them a valuable staple in the garden and kitchen year-round. With proper care and timing, fall-planted carrots can provide fresh, nutritious greens and roots when many other vegetables are just emerging from dormancy.
