How to Grow Kale
Kale is a fantastic vegetable to plant in late summer or early fall for a nutritious and flavorful harvest come early spring.
This resilient green thrives in cool temperatures, which help reduce bitterness and bring out its natural sweetness.
For fall planting, sow kale seeds directly in the garden about six to ten weeks before the first expected frost or start seedlings indoors to transplant later. Choose a sunny spot with rich, well-drained soil amended with compost to support steady growth.
Spacing plants about 12 to 18 inches apart gives kale room to flourish while allowing good airflow to prevent disease. As the weather cools, kale plants become hardier and more frost-tolerant, often continuing to produce tender leaves even through the winter months in milder climates. With some care, including regular watering and occasional feeding, fall-planted kale will reward gardeners with fresh, nutrient-dense leaves far earlier than spring plantings, making it a wonderful choice for extending the garden’s bounty through colder months.
