How to Grow Kohlrabi
Kohlrabi is a unique and flavorful vegetable that thrives when planted in late summer or early fall. This cool-season crop grows best in rich, well-drained soil with consistent moisture. For fall planting, start kohlrabi seeds indoors or sow directly in the garden about 6 to 8 weeks before the first expected frost.
Space the plants 6 to 8 inches apart to allow the swollen stems, which resemble turnips, to develop fully. Kohlrabi responds well to cooler temperatures, which help the bulbs stay sweet and mild rather than tough or woody. As an added benefit, kohlrabi can tolerate light frosts and often improves in flavor after exposure to cool weather. With proper care and timing, fall-planted kohlrabi provides a versatile and nutritious addition to the kitchen through early spring.
