Parsnips are a classic cool-weather root vegetable.

These long, creamy roots develop their best flavor when exposed to frost, which converts starches into sugars, giving them a naturally sweet taste. To plant parsnips successfully, start with loose, deeply worked soil free of rocks and debris, as they need plenty of room to grow straight and smooth.

Sow parsnip seeds about half an inch deep in rows spaced 18 to 24 inches apart, keeping the soil consistently moist for the slow germination process, which can take several weeks. Parsnips are hardy and tolerant of cold temperatures, so they can be left to overwinter in the ground with mulch protection. Harvest parsnips after at least a couple of weeks of cold weather when the tops start to die back and before the ground freezes solid. With patience and proper care, fall-planted parsnips provide a nutritious, long-lasting vegetable to enjoy fresh or stored through the colder months.
