Shallots make an excellent crop for fall planting, rewarding gardeners with a savory, early-summer harvest.

These flavorful alliums are planted as small bulb sets in late autumn, about four to six weeks before the ground freezes. Shallots thrive in well-drained, nutrient-rich soil, so work in some compost or organic matter before tucking the sets in, just deep enough that the tips are at or slightly below the soil surface. Space them a few inches apart and give the bed a generous mulch layer to insulate them through winter’s ups and downs.

Once planted, the shallots quietly begin to develop roots, anchoring themselves before winter cold sets in. By early spring, green shoots will appear, and the bulbs will steadily swell as the days lengthen and temperatures rise.

Come early summer, when the tops start to yellow and flop over, it’s time to gently harvest the clusters. Cure them in a warm, dry place for a week or two and enjoy a harvest of tender, gourmet bulbs that enhance any kitchen from summer salads to cozy winter stews.
