It thrives in rich, well-drained soil with consistent moisture, as celery requires steady hydration to develop tender stalks and prevent bitterness. Starting celery from seedlings rather than seeds is common, with transplanting typically done about 10 to 12 weeks before the first expected frost.

Plant celery seedlings in trenches or rows spaced about 6 to 12 inches apart, and mulch well to retain moisture and regulate soil temperature. As the plants grow, “earthing up” by mounding soil around the stalk bases can help blanch stalks for a milder flavor and sturdier texture. Fall’s cooler temperatures allow celery to grow steadily without bolting, often improving flavor and crispness with exposure to light frost. With attentive watering and nutrient-rich soil, fall-planted celery offers a delicious and nutritious addition to the garden for months to come.
