Fennel is a versatile and aromatic vegetable.

It thrives in full sun with fertile, well-draining soil rich in organic matter. For fall planting, sow fennel seeds directly into the garden in mid to late summer, about 1/4 inch deep, spacing plants 12 inches apart with rows about 18 inches apart. Fennel prefers cooler weather as it grows best when days shorten, which often improves bulb development and flavor. This plant requires consistent moisture but doesn’t like wet feet, so maintain a balance in watering. As fennel matures over 2.5 to 3 months, the bulb grows just above the soil surface and can be blanched by mounding soil around the base for a tender texture and milder taste. Harvest the bulb when it reaches 4 to 6 inches wide and enjoy the fresh, licorice-flavored vegetable through the cooler months. Fennel’s leaves and seeds also offer culinary uses, making it a wonderfully multi-purpose addition to the fall garden.
