How to Grow Leeks
Leeks are a fantastic, cold-hardy crop to plant in fall for a bountiful early-summer harvest.
In regions with mild winters (zone 7 and up), fall planting gives leeks a jump start; while they take their time to mature, these alliums reward patient gardeners with long, sweet stems when other crops are just getting started.
To get started, amend your garden bed with plenty of compost and nitrogen-rich fertilizer as leeks are hungry feeders. Sow leek sets or transplant seedlings about six inches apart, planting them deep to encourage a longer white shank. Cover the bed with a thick mulch layer to help protect against winter chill and conserve moisture. As spring arrives, leeks will begin to push up through the soil, and careful hilling or using a trench to gradually cover the stems will keep them tender and pale.
By summer, when the stems are at least an inch thick, leeks are ready to pull and enjoy in soups, stews, or even fresh from the garden. Leeks are among the most cold-tolerant vegetables—often thriving through frosts and snow—and they store well, making them a flavorful and practical addition to any kitchen garden.
