Mustard greens are a quick-growing, cool-season vegetable.

These leafy greens prefer cooler temperatures, which enhance their peppery flavor and tenderness. To plant mustard greens in fall, sow seeds directly into well-prepared, fertile soil about half an inch deep, spacing them a few inches apart to allow room for growth.

Mustard greens grow rapidly and can be harvested as baby greens in just 3 to 4 weeks or left to mature for larger leaves. They tolerate light frost well, and exposure to cooler temperatures can actually make the leaves sweeter. For an ongoing supply, succession planting every few weeks is a great strategy. With consistent watering, nutrient-rich soil, and some protection from extreme cold, mustard greens planted in fall will provide fresh, vibrant greens well into early spring, perfect for salads, stir-fries, or sautéed dishes.
