Spinach is a wonderful leafy green to plant in the fall for a fresh, early spring harvest.

It thrives in cool weather, making it perfect for fall gardens as the days grow shorter and temperatures drop. When planted about six to eight weeks before the first frost, spinach seeds germinate best in cool soil, allowing young plants to establish before winter sets in. In milder climates or with some frost protection like row covers, spinach can even overwinter and resume growth as soon as the soil warms in early spring.

Plant spinach seeds half an inch to an inch deep, spacing them a couple of inches apart for baby leaves or further apart for larger leaves. Keep the soil moist and well-drained, and consider succession planting every two weeks in fall to extend the harvest period. With its ability to withstand cold and deliver tender, nutrient-packed greens, fall-planted spinach is a rewarding crop that offers fresh harvests from autumn well into spring.
