Onions are a reliable crop to plant in fall for a delicious, summer harvest.

By planting onion sets, small, immature bulbs, in late summer or early fall, the bulbs establish roots before winter, survive the cold, and then burst to life as soon as spring warms up the soil. This early head-start means onion bulbs are ready to pull several weeks earlier than those planted in spring, making them a favorite for gardeners eager for a midsummer crop.

Prepare a sunny, well-drained garden bed by mixing in plenty of compost. Choose firm, small onion sets and plant them about one inch deep, with the pointy tips just below the soil surface, spacing each set four to six inches apart. After planting, add a layer of mulch to protect them through winter weather. The sets will quietly overwinter, and come spring, their green shoots will appear along with the first warm days.

As summer approaches, the onion tops will start to yellow and fall over, signaling that the bulbs are nearly mature. Lift them carefully, let them cure in a dry, airy spot for a week or two, and soon, you’ll enjoy beautiful homegrown onions, ready to add flavor to any dish throughout the year.
